El uso de le\u00f1as suaves como puede ser la del naranjo, olivo, almendro o encina, conseguir\u00e1 que el arroz no se ahume. La mezcla de los sabores de la le\u00f1a y de los fondos en el arroz, har\u00e1 que nuestra paella tenga un sabor indiscutible, inconfundible y extremadamente sabroso. Esto se logra cuando el arroz tiene la propiedad de absorci\u00f3n de aromas y sabores. Esta t\u00e9cnica es buena para arroces de mariscos o de pollo.<\/p>\n\t<p>El tipo de arroz a utilizar: Si eres una persona valiente a la que le gusta atreverse en la cocina, se puede apostar por la variedad S\u00e9nia o J.Sendra, ya que son los que mejor absorci\u00f3n de sabores ofrecen y dan incre\u00edbles resultados. Nuestro consejo es que si no se tiene gran experiencia realizando paellas, que se opte por un arroz Bomba, ya que posee la caracter\u00edstica de no pasarse, mantenerse suelto y con una buena textura tras finalizar la receta.<\/p>\n<p>No olvidemos el \u00absocarraet\u00bb: Ese estado en el que suele quedar el arroz y que a muchos les vuelve locos sabe de mejor forma en la paella a le\u00f1a.
